This sounds similar to 'the lurch' experienced on 2003-4 S-types. Well documented on this site.

However, I did previously (for a time) have a P0783 fault code; I followed the steps in the DTC guide and it went away.....

I get a slight but noticable dip at the rear of the car when at a junction or lights when - keeping the transmission in Drive and having engaged the parking brake - I take my foot off the footbrake.
It also happens if I'm waiting with parking brake on and the transmission in Neutral when I move the selector to Drive but don't let the parking brake off.
I think that's normal. If that's what you're getting and it seems to be too much the I would suggest you check the bushes in the upper and lower wishbones in the rear suspension.

Dear Forum,
Just to end this post the problem was a 'Drum'? in the gearbox that was cracked nearly in two. When the trans got hot, the crack expanded, leaked oil and locked the third (I think) gear up. This intermittent 'seize-up' was also what caused the billowing grey/white smoke out of my exhaust! I must admit, I still do not understand why a fault in the gearbox should cause smoke from the exhaust - But since the problem has gone away, perhaps I shouldn't care?

What you experienced was actually a defect in the design, and I would hope that Jaguar corrected this on the later models as this was definitely a safety issue. When applying the brake, tilt your right foot slightly to the left so as to avoid contact with the accelerator. If using a floor mat, the mat would have to be trimmed a bit in the area next to the accelerator, or omitted altogether.
