Default Fan not blowing continuously or consistently

I have a 2005 XJ8. A couple of nights ago we went out of town and during the trip the fan would blow for two or three seconds and then stop for a second or two then repeat that sequence. Last night on the way home it worked perfectly, but this morning the fan wouldn't come on at all. Then just a few minutes ago I went out to look at it and it was working perfectly again.

Seems likely that the problem is in the Climate Control Panel. Anyone have any other ideas?

The most common failure with the Climate Control fan is the Fan Control Module that sits on top of it. I had to have mine replaced about two years ago. It's not a hard job to do, and if you're a DIYer, it is possible to repair it, but any new one will have the longer cooling fins that was a mod to stop the failures. Your car is a 2005 so right in the middle of the units that were prone to failure.

Awesome info. Whats the best way to check it/get to it?

The glovebox has to come out and then you can see it. I confess I took my car to my local independent for this job ! I therefore don't know how it is tested, but I think most independents just substitute with a known good module. They are a very common failure on the early cars.
