I want to have a peak at this '95 xjr6
I know it's hard to answer questions like this but this XJR6 is only a few hours away from me and may be worth a peak.

Yes, it may be over priced but there are not many around these parts. What should I specifically look for if I want to make a deal on it outside of the usual ownership documentation and maintenance records? 175K kms = 109.4K miles on the clock. What major work should have been done by 100K miles? Is there any specific mechanical or structural weaknesses that should show up? I figure it could be mine for about $7,500 CAD.

109k is low for the year and it appears to be in great shape. I would check the overall drive ability of it. Checking the engine for smoothness at idle and under acceleration. Make sure the transmission shifts buttery smooth like it is supposed to. Check for fluid leaks and the level and condition of them. The axles tend to go out in the rear when they start leaking and all the fluid comes out. My experience with the X300 is limited (hence my join date ). However, I've bought many British cars in the past. If they run well, don't overheat, and don't leak, then you've found a really good car. $7500 is pretty steep even if that is low balling them. I guess how badly do you want one?

Well, that price is a bit high, but things to watch our for:
Functioning rear view mirror
Steering wheel tilt functioning
Seat memory functioning
Check to see if the diff fluid has been changed, and any of the diff bearings (in the cars history)
At that price, I'd be certain you've got a full documented history
Doug should chime in on this. He'd be the one to ask seeing as he's got one.

Great car. They have all the X300 "pluses" but with an extra 80 horsepower thrown in. All the usual X300 stuff, some mentioned above, applies equally to the XJR.
One thing to ask about is if the lower radiator hose has ever been changed. Really. It's about $900- $1000 job at most shops. If you were looking at two identical XJRs, same price, except one has a new hose and one didn't, the one with the new hose would be a better buy!
If it has had new wheel bearings along the line that would be another plus. And 100k is about that time that many X300s seem to need suspension bushings and shocks. New tires...something that I wouldn't normally place too much importance on... would be another bonus. The tires available for the 17" XJR wheels do not normally give very long tread life.
If the owner has really cared for the car and done repairs as they are needed, 109k miles is nothin'. OTOH, if he has been lax on servicing and procrastinated on repairs, it might need a long laundry list of work at that mileage. To get an idea of the care it has rec'd, ask the owner if he has ever replaced the supercharger oil, changed the diff oil, replaced the belts, had the throttle body cleaned, etc. If you get a blank stare, well.....
If it is in exceptional shape, has a really good service history, and the "usual" X300 repairs have already been done, it might be worth $7500. If it's an average example, $7500 would be too much.
FWIW I bought mine 4 years ago with 30k miles (true!) and in exceptional condition for $10,500.
These cars were not hand built as the seller states in his posting. They were assembly-line produced like the other Jags.
Cheers
