I've never thought of different t'stats for summer or winter. Some cars are an easy change. some not so much. and, in these "green" times, spillage and drainage are a PITA!!
I've lived and worked in the hottest of climes and the coldest. with different critters as well. All cooled in summer and had enough coolant temperature to warm the cabin.
My LT1 is designed to run hot. Some opine that lowering the operating temperature increases power. Choice 160 F or 190 F. I run the 190 F. Engine cools right on the hottest of days. Plenty of warm for the coolish days. High 30 F's at worst.
What it would do in the - 0 in our stormy NE, not known and I don't want to find out!

LT1 temps are much higher than Jags

Yes, my LT1 fans are setup with all stock stuff.. but they come at the "Stock settings the LT1's primary fan will come on at 228*, and the secondary fan comes on at 235*." GM did this of course for better emission readings... no reason to change to a lower temp thermostat with good radiator and fans. I think will all the cars GM made, they have a clue on how to do this properly.
Sealing all the incoming off so it goes into the radiator/AC condenser with side plates and dense foam on the other areas resolved any lingering
air flow problems. The Jag grille allows enough air that cooling is not a issue. I have though about adding a deflector on the bottom but do not
not want more stuff below the car.
I adjusted my Jag temp gauge (with a resistor in line) to read the new temps are in the Normal range ... lower temp shows at N-o and higher r-m. Never goes higher than that even stuck in heavy traffic with the AC on. It has seen 111F in heavy traffic with the AC on!
With air moving into the radiator at freeway speeds that temp reading will drop to just before the N...
