I'm not sure if the transplant is engine and gear box or gear box alone. If the latter, the process seems simpler. Wiring for the OD and possibly a neutral start switch. The latter might not even be present.
If the swap is engine and transmission, the complexity increases.
In both cases, my suggestions are about the same.
1. Connect the S type harness to the 69 stuff.
If an engine swap. The essentials are ignition, start, alternator/generator, oil pressure and temperature. Oh, and speedometer in both cases.
2. Create your own harness from scratch. Just draw out a sketch for a schematic.
I've done it for a couple of scratch built critters. Much older, but some of the same stuff.
No fuel injection and engine computer simplifies the harness immensely.
