It's not expensive to strip and re-veneer the panels. Just a lot of work and does require some woodworking and finishing skills. The easiest is to "wrap" them. Years ago on an extremely budget restrictive project I sanded all the old veneer away, clamped & glued new veneer onto the wood pieces, stained the veneer, and then covered it with this stuff:

Turned out pretty good. Wasn't a huge fan of the veneer I chose or the color I stained it, but it was proof of concept that it can be done. Chipped and sanded it down to bare metal, reveneered and used the same EnviroTex stuff. Second attempt was even more successful; mostly because I chose a veneer that more closely matched the original and stained the wood the right color.
