The newbie has a couple more questions
Today while putzing around and cleaning stuff, I looked in the console storage bin. Looks like the car came with the cell phone option. Is there any way to get rid of that?
In the cubbyhole next to the lighter, I found this little gray bracket of some sort. Does anyone know what this might be for?

If you remove the lid (two phillips screws in back) and then remove the two phillips screws in the front (visible in your pic, note direction of latch!) you can lift the entire liner out.
I think you will find that you can unsnap the phone insert from the underside and should end up with something like this (without the insert at top of pic).
Since that missing portion of your liner is a snap-in, it might be available to buy from Jaguar separately. I would bet against it though.
You could then buy an aftermarket tray to cover the opening. Or get a whole replacement liner from a breaker.
I don't think that gray plastic part is from the car. Looks very non-Jaguar.

The grey thing is definitely not original - I'd guess that if you release the trim around the gear selector you should be able to remove it.
Strange as it sounds, don't throw that phone kit away - someone, somewhere will pay for it. Maybe not today, but in the future someone will want to make up a fully-specced car.
