? power steering fully disabled?

My '72 Pantera has no power steering and for the little amount I drive it, it's fine, but I've taken it to several tracks that had way too many sharp turns for trying to steer the heavy steering and downshift at the same time. I felt like someone had beaten me up after the first day's sessions. It's primarily the reason I recently bought the 2010 coupe (convertibles not allowed). You think you really want no power assist?

Driver side fuse panel, first column, third one down. To get your power steer back just turn off car and stick it back in. I drove it that way for a year and put it back in perhaps 3 times. I eventually had a switch put in so I could keep the heavier steering and simultaneously regain climate control. I never put steering back to full power mode, and it's not tough at parking speeds either.

Ok I pulled the fuse and took a short drive, man what a differance. Car feels more connected at low speed but very slow, driveway etc speed is very stiff. At what speed does the ECU normally switch to low power steering? May install a switch just to play with this as I can't live without my AC.
