Sounds like you should be posting in the modern car section, this is 1955 to 1967.

I see you're already over there. :-)

Changing out engines in modern cars for a different one, even from the same manufacturer isn't easy _ unless you're prepared for it.

Having a complete donor car helps.
The V8 will want the ECU for the 8 cylinders, so the ECU from the 6, won't work.
So that will have to be changed out, then off course the engine wiring loom won't match up, so that will have to be changed.
Fuel injector rail too, maybe the fuel pump as well, the V8 may need more pressure, so that involves changing the tank _ maybe.

Exhaust will be different, and the one for the 6 can't be made to work, it's catalytic converters are designed for the smaller V6.

Transmission bolt pattern may be different to from engine to the other, so the one from the V8 may have to be used.

It can go on and on.

It is definitely possible and a number of us have done V8 swaps on the 3.8s and MKII. To me the only thing to check is what is required in your country that could add extra emission requirements, etc. In the USA cars older than 1973 are smog exempt so that eliminates other headaches that the special registration process requires. That does not eliminate a V8 swap as but you then have to make sure you include all the smog equipment, etc.
