If you want the right match a pic will not help much. Be realistic.

If you need to replace the dash, I would also do the other trim as well. While the finish color is the same for a given year and Jaguar is not as particular about matching grain as say Rolls Royce, you will get color differences from car to car and the finish will also fade at different rates depending on where the car is kept. (ouch talk about a run on sentence) There is a good website to search for used parts... www.car-part.com . I would search for a place that has the dash then call them for the other trim...

You can also try britishautowoods. They do some high end work as well as sell some dash kits. I don't think they have kits for the S-Type though. You can e-mail them to see what they can do for you.
