My car is no longer under warranty so we are about to do our own oil change since we have an oil extractor. I am right now extremely confused about the oil type the engine requires. The owners manual listed 5w30 with spec WSS M2C913-C (Shell Super Helix seems to meet this spec) but the oil cap on top of the engine says "Castro 5w20". I have read that the 5.0s require the Castrol 5w20 professional OE oil meeting the spec to the T since the engine utilizes a high oil pressure system for HP and efficiency, but is this also the same for the 3.0 or not?

The user manual made it seem like the 3.0 doesn't require such strict requirement but I'm just afraid the manual is wrong since the oil cap is saying something different than the manual.

My '15 XF also has the same on the cap. Different from what the manual states. Wonder why also?

Yep, very common. JLR updated the spec on the oil cap from 5w30 to 5w20, but didn't bother to update the Owner's Handbook. Probably best to go by the oil cap spec, ie go the 20 instead of the 30, but (and this has been debated to death elsewhere) there is no need to use the special Unobtainium Castrol brew, any good quality fully synthetic oil which meets the Ford WSS M2C913-C spec is perfectly OK.
