Default Non-mechanical chap needs a bit of advice.

Hi Guys,
I got my car back from the shop with a new alternator last week but I couldn't drive the car because the Road Tax had expired and I couldn't tax it until the car came home with a new MOT certificate. Anyway, all legal now so a trip is planned for Wednesday.
But then I got to thinking. This car has basically been stood for about 15 months with maybe 30 miles added to the clock in all that time. Also, judging by the Service History charts, she has only done about 500 miles in the previous 2 years.
So my plan is to empty out all of the fluids in the engine bay and refill the tanks/reservoirs etc with new stuff. But how many fluid types are there and how much new stuff should I use so as not to overfill the systems. Also, on a British spec 1995 3.2 litre XJ6 Auto are there any brands of particular fluids that are best to use?

ps ... Is there anything else that I should have a look at just to be on the safe side?
