I know someone has probably done a lot more research than I have...

I don't want to spend more than $500-$600 for a full set. Don't really care about drilled or slotted, but would probably would be fine with slotted.

What are my good options or what should I avoid?

Any help or opinions would be appreciated!

Go to Rockauto.com and see your options. A set of new rotors should cost less than $400 for drilled/slotted.

1/2 that for non drilled/slotted.

Don't overthink cast iron.
