Hello to all. New to Jaguars, and just starting my education. Can someone help me understand what this stamp indicates:

That is your chasis number and should, hopefully, correspond the the number shown on the vin plate. That, along with the engine and gearbox numbers, is what is referred to as "matching numbers".

I'm assuming this is a Jaguar equivalent of a VIN/Cowl tag, correct?

Chassis numbers match (as does the engine stamp), and, the chassis number lines up correctly in the production sequence in the chart posted above.
