Servicing is 90% engine oil and oil filter change every 12 months or 16,000 miles whichever comes first, with the other 10% being other parts or fluids replacements at certain intervals (eg 3 years) or mileage (eg 100,000 miles).

There is some debate whether the three year spark plug change interval shown for the V6S is correct, especially as later versions of the schedule show it as six years same as the other engines. My spark plugs are now four years old and are giving me zero problems and they are a real PITA to renew, so I won't bother for another two years. Given your driving routine I would change the oil and filter twice as often, ie every six months, my routine is very similar with lots of very short trips and rarely any long trips which is hard on the engine and I change the oil and filter every six months.
DIY = relatively cheap parts and fluids and free labour, plus the satisfaction of knowing it has been done and done right
JLR dealership = massive mark up on the parts costs and huge labour cost, waste of time and money if the car is out of warranty
Independent mechanic = half way in between.

One other concern of mine is that I have to leave my Jag outside with out any shade/cover. I live in Austin and the weather is pretty moderate throughout the year except an odd week of high temperatures during the summer. As much as I want to get a roof for that Jag, I live in an apartment now and its not possible right now. How do you think this effects the car ?

A lot of care will have to go into the soft top of the car. When mine stays out, I make sure to put the car cover on it. Ragtop or aerospace 303 soft top protectants, as well as good paint sealers/Ceramic coating, will elongate the luster of your top and paint. I've been spoiled with California weather my entire life, so caring for my vehicles has never been a difficult task. Texas is a different story.
