Default Flickering LED's

Just wondering how this is done. I've seen videos where the tail lights & head lights kinda flicker.

Usually thats a result of the light being a different frequency than the video camera can capture. Most cameras operate at a multiple of 30 frames per second, if the lights have a wavelength that is at odds with that rate then it will look like they are flickering in the video.

I've seen that too, and not just on videos of the F-Type. It doesn't seem to flash consistently though, which makes me think its a trick of a video camera's refresh rate vs. LEDs cycle rate (some displays cycle leds off and on to modulate brightness and reduce total heat which can shorten the life of the diode). Its possible the LEDs in these cars are modulated also.

Exactly. Tail light LED drivers pulse at a certain frequency to modulate brightness (pulse width modulation or similar technique), so when it's caught on video it can look like flicker.
It's the same reason wheels sometimes look like they're spinning backwards in auto videos.
