Lunar Grey
You know, Lunar Grey is a very nice color, though... I almost bought an XK a few years back and the car I initially ordered was that color. I don't think you'd go wrong with any of the three on your list, but equally you won't blend in with the crowd with the Italian Racing Red - I personally think the IRR looks great on these cars too.

IRR has a lot of contrast with the pano roof. I thought it looked pretty good on the website
My dealer has an IRR V6, with the pano roof, and it sold me to go that route. I think the pano black roof is a great contrast with the paint, and really blends the back/trunk well with the rest of the car. Unfortunately, I won't get mine til October, and I don't have any pictures of that car.

Made my final change to my order today. After seeing Stratus and Lunar, I decided to go with Lunar. Some mentioned they thought it had a blue tint to it. After some online research with pics and VINs my GM and I determined the color that has the blue tint is Satellite Gray. The blue tone in the paint is most likely why they pulled Satellite Gray out of the paint options.

I did. The Stratus is beautiful, but too dark. My last 2 Jags have been black and I wanted something different.
That lighter Lunar Grey is similar to the classic Aston Martin silver, and the coupe will look fantastic with that.
What wheels did you go with?
I followed your advice and stayed with the 20".

It makes me feel better to hear that. I wanted to get the color right. I didn't want to have any regrets in my choice.

I've got a Lunar Gray XK (20" Kalimnos wheels), and it pops when it is in the sun. When I went to see it at the dealer I had just been told that it was gray over the phone. Then when I drove up to see it I thought it was the wrong car because it was toward the silver side since it was sitting in the sunlight. I've had a lot of different cars - all different colors, but this is one of my favorites. I think you will love the color.
Now just don't have second thoughts or change your mind,lol...
But yeah. I'm pretty OCD too
