There are two diferent VIN numbers:
- One is the “US VIN” number that was always used trough the whole purchase (title, bill of sale, shipping, customs, etc.), which is the VIN that appears in every sticker and the windshield pillar (SAJNX2740TC225285)
- And a different VIN number engraved on top of the firewall was found (SAJJNXFD4T5225285)

I have to think that Jaguar customer assistance can provide something official, or at least something official looking. Surely it won't be the first time they've had to deal with this scenario.

I finally solved it, so if someone is in a similar situation in the future, my suggestion would be:
Hope it helps!
- Use both IDs: original VIN + US VIN or NAS (North America Serial) in the buying and title documents.
- If not, contact a local Jaguar dealership, explain the situation and send them photos of both VIN and NAS, plus the engine serial or the gearbox serial... they will contact their local "homologations" department and issue an official certification. In Spain it cost me around 110€.
Hope it helps!
