Default Couple noob questions

Hey guys, let me just start by saying I just picked myself up a 2000 3litre Stype. I also have just bought an air setup for it from bag riders/ accuair. Now I am running into issues and can't seem to find any info on the few bagged s types out there... I'm running 20x8.5 wheels and after the front is complete aired out I'm not as low as I was expecting to be. It seems as if my stock shock is bottoming out before I even get the chance to tuck tire! I didn't spend 2500 dollars to only lower the car 2.5 inches I've searched a bit on the forum but can't seem to find any helpful info. What are you guys who are running bigger wheels doing to take away that wheel gap? Are the sport shocks made by Bilstien any shorter than the stock shocks? Or possibly use 2 rears in the front? I know that may sound crazy but forgive me I'm coming from the BMW/VW scene...
Any help would be very appreciated!!
