I thought that but if you follow this link you will be able to connect your phone via Bluetooth.
Press the phone button for the screen to show discover me then type in ##3#*# code and press call.
When it finds your phone via Bluetooth you will need to type in to pair 1313 on your phone.
It should say phone connected now.
You can also get your jaguar to save your phone book as well by calling ##2#*# then turn off your Jaguar for 6+ minuets so that it can save after that your phone book will be ready for you to use

If you have the phone module every time you turn on the ignition it should show like "Handset" or "Sig" in the display. If you have that then the no phone means there is no phone paired to the system and that is when you can enter that code. If you do not have the module, nothing will show in the display when you turn the ignition on.

I am far from an expert on this as I do not have the phone fitted, but if you look in that link that SoundBoy posted of the owners manual there is a section on there on how to pair your phone to the system. Sounds like you lost it for some reason. I think I remember something in there on how that can happen if you disconnect the battery. Whatever it was chances are you can get it to recognize it again easy enough.
