Doesn't sound like a big deal but it'd be parked outside all day, and cooled seats I can imagine are as nice as heated ones.

In your case, since you plan on running it into the ground, is the initial miles (30k difference) that big of a deal?

The initial miles is somewhat of an issue, 'cause 30K miles is two "extra" years of "life" at my current commute distance. I re-figured it, yesterday, and it's 'only' 15K/yr, not 17K.

hmmm, I didn't think the cooled seats were available until 2008. I've been looking at many pics of the climate controls on these 04-07s, and only show heated seat options. Am i mistaken?

30k miles may be two extra years of life, but at what cost? That two years of life may well cost you $5-7k in purchase price. (But those two years between 50k and 80k may well be the most trouble-free years in terms of maintenance/repairs.)
Then again, I still think the premise that an X350 can be cost effectively driven to 250k miles is kinda far fetched!

$250K won't be without issue, but I'll do my best to keep the car in as good condition as possible (and is warranted). I'm not about to replace the driver's seat at 210K, if a tear appears.
I did the math on the '05 Super vs. an '08 MB Bluetec E320. The 320 will likley save me about $600 per year, which isn't even close to compensating for the Jag interior versus the MB's interior.
