Best places to measure temperature in engine bay?

I have been reading lots of threads particularly ones about X308 coolant temperature gauge inaccuracies. I have ordered an infra red / lazer thermometer. =
My cooling fans seem to come on soon after engine start up and stay on long after the engine is turned off...so I am worried about heating issues..Where are the best places to take readings from - I was thinking; top of radiator, top hose, bottom hose/radiator, engine block, but where?

Could be I have a dodgy water pump, coolant mixture, temp switch? etc. any other suggestions welcome...

Car runs fine, water temp gauge shows in the middle......aka other threads....car goes great no issues...but I am worried......Thank you, Allan

If you can bolt the sensor of a temperature device on the cylinder head it will be perfect. It should be up to 110-112 Celsius. Best temp readings are with an OBD reader.
