It's a glass tube that clicks into the base of the header tank, the float inside can stick on it's shaft causing a "LOW COOLANT" message.
This is generally caused by limescale on the shaft. Moving the float up and down with your finger clears the scale so it's back to normal sensing.
It's rare for the sensor to fail - a simple hall effect switch, more likely the float stuck.
