The 700 has a lower first gear than a 200. That makes it a better performer off the line when you have 2.88 rear gears, as most of us have. The advantage of the 200 is the compact length and the closer gear ratio spread.

Either transmission can be built to handle the torque and horsepower of a Jag V12.

The 200 has the same throttle valve setup as a 700 and it must be adjusted properly. This is not hard, but cannot be ignored.

The 200 is typically shorter than a 700, but the trans mount is at the very end of the tailshaft so some modification of the mount is usually necessary anyway.

Ive built my own 700r4s over theyears(and 350's 400's w/trans brake in the race car) My 87 suburban is 5500 pounds, with a fuel injected 383, 300hp nos fogger in the intake, and 390 eaton posi 10 bolt diff. Its very heavy and very fast(for what it is )
I also tow with it and drag race it. I build the 700 with Koleen steels, redline racing clutches, trangsgo shift kit, use a corvette servo, 10 vane pump, and a commercial app 3/4 clutch pack in the front that goes from 6 clutches to 9 useing thinner steels. And this is the only thing Ive ever smoked in the trans. its cost $75 in parts for this upgrade. Now if I can make mine live behind that, you shouldnt have an issue in a anemic v12. TV cables are easy to setup, you can get bracket frrom companies like TCI(They sell great 700's also) you push in the button on the engine side of the cable. push the outer sleeve all the way in and then engine off put the pedal to the floor and it self adjust the the cable to provide the correct pull. If youre doing a custom bracket I too would ck line pressure. Lack of enough line pressure to hold clutches engaged smokes them regardless of trans youre talking about
Have a great 4th, Ill be working
