Poor throttle response until warm up, normal?

Poor throttle response until warm up, normal?
I never paid much attention to this but maybe it is not normal?
When my 82 V12 is stone cold, it runs at about 1000rpm, until it warms up and drops to about 600, however right in the beginning, it does not like any throttle. If I try to give it a tap, it will sputter and act like it floods, however as it gets warmer, it starts to like throttle more and more, until it turns into its normal, beastly self. Should I check ignition timing perhaps?

My first guess is that the coolant temp sensor is skewed and not telling the ECU that the engine is as cold as it really is. This would result in a lean mixture....sorta like an old car where the automatic choke doesn't work.
If you have a ohm meter I can give specs on the snesor so you can check it. Or just replace it...they're only $25 or so. Not too painful as guesswork goes.
Cheers
