Default Brakes have much better bite on rainy days

Last year I changed all four brake pads and rotors. I used OEM rotors and the Centric Posi-Quiet ceramic pads, and I changed the brake fluid using Pentosin SuperDOT 4, and I followed the manufacturer recommended procedure for bedding in the pad. My car has the Brembos and braided steel brake lines. Let me start by saying that you should stay very very far away from these pads on this application. They brake well enough, and stop the car with enough force to activate the ABS, but the bite and pedal feel is very lacking.

I usually avoid driving the Jag on rainy days, preferring to drive the Jeep because of the ground clearance. Well, today I was caught in a surprise deluge, where the water rose about 2 or 3 inches from the ground, and the most interesting thing happened. My brakes suddenly exhibited snap your neck, punch in the gut bite, excellent pedal feel, and I could swear it stopped better. What kind of brake pads bites better on a wet rotor?

Now that I'm convinced that my problem is the shitty pads, I'm looking to buy upgraded pads. I know this topic has been touched over before, but has anyone a better suggestion for pads for the Brembos? Ceramic is preferred, but if no ceramic pad has good bite, I'm willing to switch to semi-metallics and deal with the extreme dusting.
