Since I'm not pulling stumps and I will be driving on the highway, I am changing the rear end of my '67 OTS from 3:54 to 3:07. Since 3:07 is what was on E-Types that stayed home, is it just a mater of acquiring a home market Speedo or is there more to it?

Think you can just buy a 3.07 speedo, or I think you can get your existing one re-calibrated. In the UK speedograph Richfield do this.
