Extended leather means the leather extends upwards to the top door sills, the passenger side of the dash to the windshield. Depending on the year, "extended" means the leather is the same color as the seat upholstery. Other years it means the entire console color matches that of the seat upholstery. Basically, I think that Jaguar varied what is included in the spec for an option package in order to differentiate one model year from another. As you can see from the photos of both P450s the interior door color and console arm rest are different even though they are the same year and option. The only visible difference is that one is RWD and the other is AWD. 2023 P450 with extended leather package. My wife's 2018 R-Dynamic (formerly called a "S" and subsequently called a "P380") with preferred leather interior package. 2023 P450 with extended leather package.
Random question, but does anyone know the difference between the regular "full leather" and the "extended full leather" option from factory? I can't find specifics anywhere and the only visual cue is the additional leather quilting on the door cards. Two cars are currently in contention for me, one with the extended leather and one without.
The extended leather package (which I have) means full leather seats (not just the facings), the door and centre armrests, the door panel above the armrest, the console grab handle, the top of the dash, passenger side, the A pillars, and the roof lining…I might have missed something in this list, but if it looks like leather, it IS leather, premium Windsor leather.

It does appear to change from year to year. In my 2018 with extended leather the A-pillars and headliner are not leather.
Since the subtle interior material changes were brought up, does anyone know if there are any substantive differences between model years '21, '22, and '23? I know all '24 are the "75" models with the blacked out logos and a few embossed differences, but are there any mechanical or software differences? Everything I've looked up point to them all being 99% the same.

As per Edmunds here is what is new for each year:
2021
Updated front and rear styling
New digital instrument panel
R engine gets a power bump to 575 horsepower; SVR model no longer offered
P340 and P380 rear-wheel-drive versions are no longer available
2022
F-Type goes V8-only
P450 debuts as base model, and the P300 and P380 are discontinued
More standard equipment at a lower price than previous base model

Not quite, unless it's a US thing. Over here the leather A pillars and roof lining are not included in the extended leather package.
Here's mine. For some reason the MY18 cars also got the whole centre tunnel color matched which I'm really happy about.
On my '23 the 'extended leather upgrade' only applies to the seating, and was a no-cost option if you got the Windsor Leather Performance Seats. Leather headliner and sun visors were a separate $1500 option IIRC.

Same here in Oz.
After wondering for many years if my car has standard leather or extended leather (the Topix build sheet is ambiguous) this thread has helped me figure out that it has extended leather but without the A pillars or roof which are both standard "morzine" finish.
