while discussing all this torque curves you should not forget about the different rear end diff ratios between the V6 and the V6S . Having nearly the same torque level up to 5000 rpm the V6S feel more agressive due to its shorter rear-end ratio . Remapping a
V6 with additional 50Nm of torque might give the same result on the back wheels as a standard V6S . Perhaps changing the diff is more straightforward .

Agree, it is very interesting and impressive to boot. I've since been informed that they do it without increasing boost. Hopefully, it's not leaning the mixture too much as well.

Were it not for the warranty implications, I'd be seriously considering this now, but I may in the future if I keep the car past the warranty period, and if it proves to be a relatively trouble-free machine.
