I have 245 wide tires on all four corner and there is no issues removing the wheels fully inflated at all and my wheels are 17" x 8.5". I never had stock wheels very long and to me I doubt that wider tires on stock wheels would cause any issues in removing the wheel/tire fully inflated; every car I own has wider than stock tires without issues.
The way the rear S-type fenders cover a portion of the wheel and tire is what looks cool and with my custom wheels it is one part of the car that people often comment that it looks so cool with the larger wider wheel/tire with that body design. There is no improvement on ability to fit wider wheels by modifying the back design and it to me makes the car not look that clean and nice. That is one of the cool aspects of what makes an S-type a cool car, the rear arch, the beautiful wood, the IRS, and compared to a MKII I feel the rear shape of the car looks more balanced.

Primaz I think it depends on several factors to which size tyres you can fit. As you said with the original tyres and offset you can not go beyond a 205 especially with wire wheels as the wheel has to come out in a straight line parallel to the ground over the splines. This means the top of the tyre contacts the back of the arch before it has cleared the splines. Same with the five studs but not to the same degree as once you have pulled the wheel an inch off the studs you can lay back the top of the tyre to slide it under the arch. On the other hand if you change the studs for wheel bolts then you would have a lot more room to drop the wheel vertically once the last bolt is removed and have plenty of space for a wider tyre. Combine this with a different offset and that is possibly why you can fit you 245 tyres on.
I have told the story before but I bought a second hand set of Jaguar stainless steel wire wheels for my car and when they arrived I found they were off an E Type not an S Type. 6.5j instead of 5.5j. Got the wheel and tyre on bu deflating the tyre but when it came to taking them off I had to remove the bottom bolts on all four shock absorbers to drop the suspension down low enough o pull the wheels off the splines. Now sat on 205s with 5.5js and not having a problem

All becomes easier with wide tyres if you convert to bolt on wheels.

Primaz, lower profile tyres will help a lot. The original 185 R 15 tyre had a side wall of 80 so a tyre rubber depth of 145mm . If you are running 245 with a 40 side wall you only have 98mm depth of tread to squeeze under the arch. A lot easier.
