I think that the veneer used to cover the 'flat' areas of wood in the S type is Burr Walnut. But does anybody know what type is used for the edges of the panels as circled below?
You could use a lighter coloured mahagony, or you can bleach darker wood as well. Certainly in Canada I have found that most of the wood veneer suppliers are not setup for online sales. Due to the individual nature of the grain and colour most people need to see the veneers before buying and photos do not do the job.
This is the only place on line that I know of that actually has photo's of what you're getting in matched lots.
If you're trying to match things up with an existing piece, that may be an uphill task as most of the big trees are probably long gone _ nothing left but farmed "smalls" with tighter grain more then likely.

If one starts looking around at other professional jobs, others seem to use almost anything, eg walnut sap wood, or box wood.
I had a dash cap from a Daimler that was very far gone and when I removed the old veneer, large sections of the edge banding appeared underneath the bur walnut _ it looked more like birch then anything else.
