It's normal for the cooling fan to run after shutdown if the coolant temp was above a certain threshold. That would explain why it didn't do it the next time, as the coolant probably wasn't quite as hot.
On my '02 V6, the cooling fan rarely stays on after shutdown. It has to have been a very hot day with slow traffic for the coolant to reach that temp.
Please keep in mind the temp gauge is deliberately misleading. I forget the exact numbers, but there's a range of about 40 degrees F where the needle stays centered. Above that band, the needle will start to climb, but as long as the coolant temp is within that band, you'd never know by watching the needle if the actual coolant temp is at the top or bottom or anywhere in between.
I'd make sure the cooling system is filled to the proper level and just keep an eye on it. On my car, it's rare for the fan to run after shutdown, but it does happen on occasion and is no cause for alarm as long as the temp gauge stays in the normal centered position. Maybe some others can confirm how often their fans run after shutdown.
