Jay, your best bet will be to get rid of the A/C unit and then fabricate a new idler pulley to go in its place. I am not sure if you have a part of the engine that may stick out between the crankshaft pulley and the idler pulley (the points just before and just after the A/C).
If you think you can do it without making this pulley, then all you need to do is take a string, route it the way that you are going to route the serpentine belt and measure the length. You then have the critical dimension you need. You can then walk into your local auto parts store and they will be able to look up the belt that would be closest to what you need. So, for example, if the factory X-Type belt is 890mm in length, your string may be say 750mm, you simply ask for the 5 rib, 750mm belt. The auto parts store will be able to tell you the nearest belt they can get.
