I’m looking at getting new rims for my 2010 XF. I see that it’s a 49 mm offset. Do I have to have that offset or what parameters can I go win and still be safe?

The bigger the number of the offset figure (which in 99% of cases is a negative offset) the more the wheel is offset towards the middle of the car and away from the outside of the fender. So the stock 49 mm offset pushes the wheels "in" a fair way, and on some XFs with staggered wheels such as the XFR the rear wheels have a massive 66 mm offset (mainly because they are wider than the "ordinary" XF wheels). The stock wheels generally look way "tucked in" but at least this leaves heaps of room to play with the offsets before there is any chance of the tyres rubbing on the fenders.
If you want a better "stance" with wheels and tyres pushed out closer to the edges of the fenders then get wheels with say 20 mm less offset, ie +29, or get stock +49 and fit 20 mm spacers/adapters.
