Greetings Rand,
As far as I have been able to learn, there is Oatmeal and there is grey, period. I pulled sunvisors of each color and went to a distributor who stocks all sorts of headliner fabric. Selecting from the choices that had the thinnest foam backing, we found a color that matched in both cases.
The grey 2001 XJR I did looked great, and I have done many cars with the oatmeal which also looked to match just fine.
In my experience, you can't crease this stuff at all. I have always asked about the fact that WLS ships their fabric folded, and everybody says it's no problem. I won't do this job and have creases when I'm finished, either I'm being overly cautious or their standards are not as high.
So I can sell you the grey fabric, but it will only leave here on a cardboard roll and probably cost alot to ship as the package will be six foot long. PM me if you want a sample or any other info.

I don't have any idea if there is a standard number for different colors used by similar suppliers of similar products. That's why I didn't bother pursuing it when I looked at peoples' color charts, and they certainly won't know anything about Jaguar trim codes. So I cirumvented all of your questions and found my own answer.

I'm looking for the exact color match for my 2005 Jaguar XK8, it is grey, and I'm being told by some that there were only two colors, silver and antelope. Another source told me there are four colors, including charcoal.
I received a sample from one fabric place of the silver, and it is a little lighter than my car, so I'm wondering if the charcoal is my color.
How in the heck does someone find out so as to get the best match? The headliner, of course, matches the material on the A pillars and the header portion of the convertible where it meets the top of the windshield.
