The symbol is the back of a car on a road with a <---> arrow behind, it is located above the message centre to the left of the amber and red warning lights.
That wouldn't have started till the XJ350, the 308 never had adaptive cruise in the NAS market. But the symbol that you're describing, does it have a triangle around it? Those arrows are related to the Forward Alert.
That's what my x308 has in it, and as far as I can determine, it's completely stock, the symbol doesn't light up, and I didn't notice it until I had taken the cluster out to add a RealGauge.
Was the x308 ever equipped with forward alert (2000)? I just have no idea what that's all about.
As said before, the X308 NEVER had "forward alert" or adaptive cruise control fitted as standard, or even as an option from the factory.
The clocks seem to be from a 2003 or later XK, that did have adaptive cruise control as an option.
Having said that, Jaguar at the time was owned by Ford.... and they are notorious for parts bin engineering, but that dose not explain a later version of the clocks being installed in your car.
Adaptive cruise and forward alert weren't available till 2003, at least in the NAS market. As for other markets, I'm not sure. Since I've been in NZ for the past 5 years, I haven't seen any pre 2003 cars with forward alert or adaptive cruise. When it comes to the wiring harnesses, Jaguar makes them for all the features available, to cut down on cost, and then depending on how the car is ordered, only those modules will be fitted, but the connector will still be there. It also could be that if the Instrument Pack was replaced, it was at a time when they were starting to make updated ones for the facelift models coming out that would have forward alert and adaptive cruise.

Not really.
.
NA cars not fitted with NAV do not have the ICE harness to support NAV.
Can adaptive cruise control be added to a 2002 XK8 convertible? Like others, I have the light on the clock. If I can get one close to "plug and play", I'd be interested.

IIRC, the hardware is not easily obtained unless you get it from a wreck and those who have it OEM find that when it fails, cost to repair is something outrageous like $1500.
