Fan behavior
I’m used to the X300 with the jumper wire trick, fans permanently on low-speed with ignition and jump to high speed when needed (not often).
As far as I can tell the X308 is supposed to run the fans on low speed with the AC engaged and high speed with the temp (200 ish) trigger. My fans won’t run at low speed and turn on/off to high speed pretty frequently at idle, sometimes even for just a couple seconds. Can I just jump the AC pressure switch connector to make it less annoying?

Are you saying that the fans never run at low speed, or that they don't run at low speed when the AC is turned on? If it's only when the AC is on, I don't know what the problem would be. If they never run at all, you may have a blown low speed fuse. There is a fuse box under the hood on the left side of the engine that contains the low speed and high speed circuit fuses. I don't remember off hand which fuse it is, but you can pull them out one at a time and look, or use a multi tester. Or wait for someone to reply who knows which fuse it is. I think the low speed relay is also in that same fuse box. The high speed relay is under the radiator area on the left side, but I don't think the high speed relay is the problem for you.
