A quick question: Can I, or should I, put a liquid gasket bead on the two pcs on the thermo housing after installing a new thermostat?

 

Of course you can.

But the 'O' ring seal seems to work just fine. I don't remember anyone reporting a leak at that point. It's the plastic housing that cracks and leaks. Perhaps you should consider installing the aluminum version along with the thermostat.
