I'll be replacing the expansion valve. Anyone have any tips on not damaging the Evaporator when doing this. After disconnecting the HP line, do I just hold the attachment pipe nut and unscrew the old valve? Should I soak it down first?

That's it. It might fight you; they're often quite tight. It can be a little nerve wracking. Whatever you do, make sure your backing wrench has a solid purchase on the evaporator nut and don't let it move!
Ian, when I replaced mine I also packed a big pinch of "duct seal" around the coil/probe on the end of the small tubing once it is attached to the other pipe. I've used lots of technical words there, but you probably get what I mean. I think this procedure is outlined in shop manual too.
I saw mine being replaced. The mechanic used an+ adjustable metal CLAMP with rubber "grabbers" at the closest part of the valve to the firewall, clamping and holding the valve firmly to avoid stressing the valve-to-evap union, then a spanner or open-end wrench to loosen the nuts.
