Default Brake & Fuel Line Fittings

I am replacing all the fuel, brake and other tubing lines. What type of fittings are people using? The original fittings are brass with a male and female connectors with the two types of flairs. When looking online the suppliers want to sell a three piece union. Are pepole using the three piece unions or a two piece like the original installation. Is the female bubble flare just a standard connector like on the three piece units with a ferrule? What type of material are people installing for the fittings (brass)? Does anyone have a good supplier for the original two part fittings?
