I reached out to Paul's Jaguar in Florida; they have the Connolly hides for replacement on my 96-celebration model. The celebration model has the wood steering wheel and the leaper embossed head rest on front and rear seats. I need new leather in my cat, does anyone know who to contact to get the new seat covers embossed with the leaper.

All the 4.0 XJS cars after VIN 221855 and built from April 1995 have embossed Jaguar logo seats.

If you're being sold seat covers without the logo, they are not correct for your car. Don't try and get them embossed after. I'd suggest that you go to one of the suppliers who sell the correct embossed headrest seat covers.

I'm looking for a supplier who has that or will do that. The Florida people have the Connolly leather hides they bought from Jaguar. But, they won't emboss, that's why I'm looking for another solution for embossing. Anyone you may know?

The market for new seat covers for XJS is well established in the UK and I'm sure even more so in the US.

In the UK, there are a number of very reputable suppliers of good quality trim. Sometimes their websites don't show every single variant so you would need to contact them and be very clear about the model years and seat style etc to ensure they have exactly what you need. Some of them had definitely developed the embossed integral headrest covers that you require. I just can't remember which companies. As a starter, try the following 3 companies. All very well respected in the UK. I'm sure your US colleagues will chip in other US suggestions.
