Sorry about your poor experiences with your XK. It's true that they suffer from a variety of electronic glitches, but I did not think the car's override system would allow the top to raise or lower at speeds above 10 mph. It sounds as if your override system is not functioning....

When pushing the roof down button the rear windows will open all the way regardless of speed. Pushing the roof up then, you can close them partially or all the way. This way you may drive with all windows down and roof closed. But, as all you convertible drivers know, to open the roof you have to hold the button. Again, the roof function is supposed to be inhibited above 10 mph either up or down regardless of how long you push the button.

Battery voltge is fine, but rear windows will not go up and roof will not go up or down, fluid is perfect and I do not hear the motor when I press the roof button.
Do these roof latches ever fail completely?

Checked fuses and I finally got it to work. By pressing up on the roof has hard as I could and using the allen wrench to open the latch, I was able to get the top open and then closed, along w/rear windows. But I cannot figure out how the top opened in the first place?

Here is where you have the relays. Be sure they are properly seated and have good contact. If possible test each relay. Disconnect battery when working on the electrics. It could also be a problem in the Body Processor Module (BPM), but that is beyond my knowledge.

At this point your roof is confused or a switch is out of sequence and additional attempts are not helping matters. I am thinking that your detailers might have confused your system and you experienced a sequential brain fart causing the roof to come open @ 70mph. I want to help but it would take a lot of dialog so check your PM for my number.
