I believe this happens when the fuel pressure is suddenly required to drop, like when you close the throttle when cruising. When that happens, there is a valve at the pump that is supposed to pop/release the pressure. If that does not happen, the pressure at the rail rises (as compared to manifold pressure) and the sensor maxes out. I would start with your favorite injector cleaner (Techron III is well liked here) to see if that frees that pop valve. Otherwise, the fuel pump has to be replaced ($$$). This is a tricky/sometimes error, which complicates the diagnostics. AFAIK, there are no aftermarket valve or pump, the whole assembly has to be sourced as a Jaguar part.
Best of luck, keep us posted.

wrischan, I can not find out what year of car you have and XK or R type.
Checking the fuel rail pressure may tell us something.
