This issue used to come up all the time with Corvette..and specifically the ZR-1..owners who were seeking more performance. I don't know if anyone could ever prove any increased performance, but the one fact that was always true was that it affects the emissions parameters/operation....and with the ZR-1 it delayed or stopped the ability of the secondary ignition system to activate. That, obviously, hurt performance considerably. Use whatever your car was given at oem or you'll be dealing with lots of unintended consequences.

Just MHO.

Regarding a lower temperature thermostat--when I had my Corvette there was a handheld programmer available (Hypertech) that would supposedly yield some extra power by doing something with the fuel curve and/or timing. But if you wanted to use this "power programming" you also needed to install a lower temperature thermostat and also program the fans to come on sooner. When I did the thermostat and fans the temperature gauge went from typically 225-degrees down to about 180-degrees. Presumably running at the lower temperature would allow for the tuning tweaking and avoid detonation.

I am in southern California and I never had any problems from running at 180 versus 225 but there may be problems if you are in colder areas.
