Default EGR help and thermostat coolant housing leak

Hi all please bear with me fairly new to all of this, going to clean my EGR tomorrow done a pre reccy over the EGR and it looks like a blanking plate has been installed, if the EGR needs cleaned is it worthwhile putting the blanking plate back in? if i don't does it need a seal instead (where the blanking plate was). i have also discovered i have a coolant leak from the thermostat housing (common problem i believe) underside of the housing is wet and a lot of liquid has gathered on the engine bay underneath to the right the coolant level has dropped to just under the min. i need to top this up any recommendations on what brand i should use oh and how easy is it to replace the housing unit.

any help would be greatly appreciated.

Just cleaned the EGR it was pretty gunked up left the blanking plate in place just need to try and work out what or why i am getting poor mpg.
