Pick up a copy of Hemmings Motor News. They used to have adds for instrument rebuild/repair services back in the day. Start in the Jag section.
You might have some luck at Welshenterprises.com (1-800-875-5247) as well. They sell all kinds of new/refirb stuff for old Jags.

Been a while, but they seem to still be in business
I had the speedo from a '65 AH 3000 repaired in the early '80s by this place.
