The gas pedal on my 2020 F-Pace is too small. Can someone recommend an aftermarket set that might extend the length a bit. I’ve found many aluminum sets I could purchase, however, I’m not sure if they would actually improve the size. 1/2 inch in length would be helpful.

More seriously, there is a Summit Racing retail location in McDonough, GA. The one here in Texas is a storefront on a warehouse building about a 1/4 mile square under roof. They sell dozens of racing and hot rod pedal covers and assemblies. You might be able to visit the storefront and actually be able to look at several options to determine if any could be adapted.
