Being a Native Kansan, I can say that there really aren't any nice scenic roads that would be an enjoyable ride. We have some very nice, wide open highways although speed limit is generally 70.
If central Midwest is the ideal "hub", I would recommend perhaps meeting a bit farther Southeast. Northern Arkansas has some beautiful scenic twisty roads and Eureka Springs is a nice little town to spend a few hours. Plenty of hotels around as well. I highly recommend the Crescent Hotel. Beautiful location, great views, and you might even see a ghost!
