I've seen the how-to for a few different Jags, but I came back empty handed for the F-Type. Is there a way to just disable auto stop-start without pushing the button in the center console every start?

At least a couple of threads around here and numerous posts on how to do it.
Depends on what MY you have and therefore whether you have the two battery or one battery set up.
For the 2013 to 2015 MYs the F-Type had the two battery set up, and you can easily disable the stop/start just by disconnecting the earth lead from the negative terminal of the secondary/smaller battery from where it bolts to the floor of the trunk.
For the 2016 and on MYs the F-Type has the single battery set up and you disable the stop/start by disconnecting one single electrical plug, at least one thread here somewhere showing exactly which one.
