Does anyone knows if its possible to get the windscreen cameras video stream (video cable inside the dashboard ?) to be able to create a DashCam with it.
it annoys me to install another camera on the windscreen when there are already two...

That's not a camera. What you're looking at, I suspect, is the sensor that operates the auto headlights and hi beams.

On the last F Type models their are two cameras at the top of the windscreen for lane assist system, auto brake system and road sign reading.

I wanted to access to them and get the stream use it as a dash cam.

 

I suspect that even if you could, the resolution would not be up to the very good results of current dashcams. Then of course you have to figure out how to store the data. Honestly the Blackvue range (I have the 650) get good write ups and are not really noticeable when the rear view mirror hides much of them.

Anything might be possible if you throw enough time and money at it, but why bother.

But as an passionate engineer i have to hack everything around me !
I also have a dashcam that is working well but it annoys me to see those cameras and that Jaguar just don't wanted to implement the soft to be able to record... like on the new C7 Corvette.
